Foxberry compote

Make your pancake delicious

During your walk, you saw where the foxberries were growing and how they look. Maybe they weren’t in bloom then and you have to wait a while. Did you know that this foxberry grows in multiple locations in the Netherlands. So if ou know well what is looks like, you can also look for it in your neighborhood.

The foxberries are edible, but they are not the most delicious on their own. However, you can make a delicious compote out of them. And that is super easy to do!

To make the compote, you will need the following:

  • About 400 grams of foxberries
  • One cup of water
  • One cup of sugar

The dish is very simple:

  • Bring the lingonberries to a boil with the water and cook on medium for 7-8 minutes, stirring frequently. 
  • Remove the pan from the heat and add the sugar to the compote, stirring frequently here as well. The sugar should be completely dissolved.
  • Now let the compote cool down to room temperature and put it in an airtigh jar (such as a weck jar). You can then easily store it in the refrigerator. 

This compote tastes great with game meats or how about pancakes?
